        The Tandoor is a cooking medium dating back millenniums, a favourite with all, from Royalty to the peasants. In the past a large cavity was dug into the ground and the surrounding earthen walls cured for days with charcoal & wood. Now it has evolved into an oven like large Earthen Cavity housed in a metal drum maintaining high temperature. The preparations are skewered and suspended into it not allowing any direct contact between the surface, flames or the food being cooked in it, thus baking / grilling quickly to ensure retention of the culinary juices, aromatic herbs and spices used in the marinades, resulting in juicy & tender preparations with little or no fat content. Traditionally the fuel has been coal but now Tandoors are usually fired up with gas, thus loosing the true flavour.
